Apple Coleslaw

Salads

Saturday, July 03, 2004
1 unpeeled tart apple, coarsely chopped
2 tablespoons lemon juice
2 cups coleslaw mix (1/2 bag)
1/2 cup chopped celery
1/2 cup chopped green pepper
1 teaspoon dried chopped onion (or 1/4 cup chopped fresh onion)
1 teaspoon celery seed
Zesty Italian bottled salad dressing to taste
In a serving bowl, toss the chopped apple and the lemon juice. Add the coleslaw mix, celery, pepper, onion, and celery seed. Mix. Add enough Zesty Italian salad dressing to coat the mixed ingredients. Chill until serving.
For full flavor, make this salad at least an hour ahead of serving time and refrigerate until serving.
